Okra and Green Beans

Ingredients

3/4 pound fresh uncut okra
3/4 pound fresh green beans
1 medium onion, diced
2 large garlic cloves, crushed and chopped
1 cup water plus 2 tablespoons salt and freshly ground pepper
1 6-ounce can tomato paste
4 tablespoons olive oil
Vinegar (optional)

Directions

1. Wash okra pods and trim stems. Do not remove caps. You may soak okra in vinegar for 30 minutes to remove some of the stickiness. Rinse well and drain.

2. Wash beans. Cut them into 3 inch lengths. In a sauce pan, combine water, tomato paste, olive oil, onion, garlic, salt and pepper. Mix well.

3. Heat, stirring frequently, until mixture comes to boil. Add okra and beans. Add additional water if needed to almost cover vegetables.

4. Reduce heat to low, cover and simmer gently until vegetables are crisp-tender, 20 to 30 minutes.

Makes 6 servings.

Notes:

This dish tastes even better after refrigerating overnight. You can serve it warm or cold.

This dish can also be oven-baked. In this case, instead of simmering, lightly cover with aluminum foil in a casserole and bake for 30 minutes at 350F.
