Okra in Yogurt
1 lb okra
2 medium tomatoes, sliced
3 medium fresh green chillies, chopped
1 medium onion, sliced
2 tbsp corn oil
1/2 tsp onion seeds
1/4 tsp turmeric
2 tsp shredded coconut
1/2 tsp salt
1 tbsp natural (plain) low fat yogurt
1 tbsp chopped fresh coriander ( cilantro )
1 Wash, top and tail the okra, cut into 1/2 in pieces and set aside.
2 Heat the oil in a medium frying pan, add the onion seeds, green chillies and
onion and fry for about 5 minutes until the onion has turned golden brown.
3 Lower the heat and add the turmeric, shredded coconut and salt and fry for
about 1 minute.
4 Add the okra, turn the heat to medium-high and quickly stir-fry for a few
minutes until lightly golden.
5 Add the yogurt, tomatoes and finally the fresh coriander (cilantro). Cook for
another 2 minutes.
6 Transfer onto a serving dish and serve immediately.
