Beef or Chicken Stock
Ingredients:
2 lb Cooked or raw bones of meat or poultry and cooked or raw meat trimmings
1 1b Vegetables (carrot, celery, leek, onion, etc. ), roughly chopped
8 Black peppercorns
1 Bay leaf
1 tsp Salt
Directions
Place the meat in a large saucepan and cover with cold water. Bring
it to a boil.
Add the remaining ingredients. Bring back to
boil.
Simmer very gently, uncovered, for about 3 hours, topping up with water as necessary.
Strain and skim off any fat before using.
