Coconut Milk (Coconut Cream)
Makes about 2 cups
Crack the shell of a coconut and remove the meat. Pare away the dark skin from the meat, then grate the white meat and place in a piece of cheesecloth.
Bring up the ends of the cheesecloth to make a bag. Squeeze to extract the juice.
If more coconut cream is desired, empty the squeezed coconut into a mixing bowl and add one cup of water. Let stand, then squeeze once more in the cheesecloth.
