Green Mango-Cucumber Relish
3/4 cup cider vinegar
2 tablespoons brown sugar
1/2 teaspoon celery seeds
2 tablespoons minced fresh mint
1/4 teaspoon white pepper
2 cucumbers, unpeeled and thinly sliced
2 cups thinly sliced or shredded green mango
Mix first five ingredients in a small bowl until brown sugar dissolves. Mix cucumber and mango in a 2-quart container. Pour dressing over cucumber and mango. Cover and chill at least 4 hours. Drain and discard liquid before serving.
Yield: 4 cups
