Minted Citrus Dressing

Great for fruit salads, fish, or chicken salad.

Ingredients

1 teaspoon chopped fresh mint leaves, or 1/4 teaspoon dried mint leaves 
3/4 cup orange juice 
2 tablespoons lemon juice 
1 teaspoon Dijon mustard 2 tablespoons red wine vinegar 
2 teaspoons olive oil 
Salt and pepper

Yield: 1 cup

Directions

Combine all ingredients, adding salt and pepper to taste, in a lidded jar. Store in refrigerator till ready to use.
