This oil is great as a salad dressing base and for marinating meats. Combine with scented vinegar to make great vinaigrette.
2 cups virgin olive oil
3 cups sliced red onions or shallots
Yield: 2 cups.
Combine the oil and onions or shallots in a large bowl. Cover with plastic wrap and leave in a cool place for 6 hours.
Remove the onions or shallots with a slotted spoon.
Pour the oil into a jar. Cap.
Note: You can use the onion or shallot to serve over grilled steaks or chicken.
