Pureed Cooked Pumpkin

Ingredients

Pumpkin

Directions

Cut pumpkin into large pieces. Remove seeds and fibers. Peel pumpkin pieces and cut into 1 1/2-inch chunks.

Place pumpkin chunks in a saucepan with about 2 inches of water. Cover and bring to a boil. Reduce heat and simmer for about 20 minutes or until pumpkin is tender. 

Uncover and cook briefly, shaking the pan until pumpkin is dry.

Use a food processor to puree the pumpkin.

Notes:

Use pumpkin puree in recipes for pies, cakes, and breads. (see Pumpkin Doughnuts)

To serve as a vegetable, season to taste with salt, pepper, and nutmeg; add butter or margarine and a little cream.
