Spicy Tex-Mex Rub
1 tablespoon chili powder
Place all of the ingredients in a small bowl, and stir to mix well.
Apply the rub according to the directions given above, and grill, broil, or roast the meat as desired.
Yield: 5 tablespoons (Enough to season approximately two pounds of meat, seafood, or poultry.)
Note: This mix will remain flavorful for several months. So make a double or triple batch, and store the mixtures in airtight containers.
How To Apply The Rub: Rinse the food and pat it dry with paper towels. Using your fingers, rub the outside surface of the meat with the seasoning blend. Allow the food to stand at room temperature for fifteen to thirty minutes before cooking. (Refrigerate if you are going to set the food aside for more than an hour.) Spray the food lightly with nonstick cooking spray, and grill, broil, or roast as desired.
