Italian Bean Salad
19-ounce can red kidney beans, drained and rinsed
19-ounce can cannellini beans (Italian white beans), drained and rinsed
1 cup chopped red onions
1/2 cup chopped celery
2 tablespoons snipped fresh parsley
2 tablespoons Dijon mustard
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 cup lemon juice
1/4 fat free Italian salad dressing
Place the ingredients in Group 1 in a large bowl. Mix.
Place the ingredients in Group 2 in a small bowl. Mix well.
Pour over the bean mixture and toss to coat. Chill.
