Artichoke Pasta With Tomato Sauce
32 oz. can organic plum tomatoes, sliced
3 oz. (dry weight) organic artichoke flour angel hair pasta
5 cloves sliced garlic
3 oz. yellow onion diced small
12 basil leaves rotted and sliced thin (chiffonade)
1-1/2 tbsp tomato paste
1/2 tsp. red chili flakes
2 tbsp. extra-virgin olive oil
2 tsp. salt
Heat oil in a skillet. Saute garlic and onions until lightly browned.
Add half the basil and the tomato paste. Continue to cook for 2 more minutes.
Add drained tomatoes (sliced lengthwise) to pan.
Simmer 10- 12 minutes. Add salt and chili flakes.
Cook angel hair pasta in boiling salted water until half done and drain.
Add pasta to sauce and cook on low flame until some of the sauce has been absorbed into the pasta.
.Transfer to a serving bowl, sprinkle the remaining basil on top and, and serve.
