Chicken Breasts Oreganata
4 7-ounce chicken breast halves, skinned
2 garlic doves, crushed
3/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
Yield: 4 servings
Combine olive oil, garlic, oregano, salt, and pepper in a shallow bowl. Dip chicken pieces in this seasoned oil, turning several times to coat thoroughly.
Preheat broiler. Set chicken, bone side up, about 6 inches from heat and broil 10 minutes.
Turn chicken. Baste it with seasoned oil. Broil for an additional 10 to 15 minutes, until chicken is white throughout but still moist.
Serve with tossed green salad and a slice of toasted Italian bread.
