Chicken Filice with Garlic

Ingredients:

1 (3-pound) broiler-fryer chicken
40 cloves garlic, peeled and left whole
1 lemon
4 ribs celery, thickly sliced
1/2 cup dry white wine 
1/4 cup dry vermouth 
1/4 cup olive oil
2 teaspoons dried basil leaves 
2 tablespoons finely chopped fresh parsley 
1 teaspoon dried oregano leaves 
Pinch crushed red pepper 
Salt and black pepper 

Directions

1. Cut chicken into serving pieces.

2. Preheat oven to 375'F (190 deg C). Place chicken pieces, skin side up, in single layer in shallow baking pan. 

3. Combine garlic, wine, vermouth,  celery, basil, parsley, oregano, red pepper and oil in a medium bowl. Mix thoroughly. Sprinkle this mixture over chicken pieces. 

4. Remove peel from lemon. Cut it into thin strips. Place peel over chicken mixture. 

5. Squeeze juice from lemon and sprinkle it over chicken mixture. Season with salt and black pepper. 

6. Cover pan with aluminum foil. Bake 40 minutes. 

7. Remove foil. Bake an additional 15 minutes or until juices run clear. Garnish as desired.

Yield:

Makes 4 to 6 servings
