Chicken Sandwiches Veronique
Ingredients
1-3/4 Cups cubed cooked chicken
1/2 cup chopped celery
1/2 Cup seedless grapes, halved
1/4 Cup chopped pecans
1/8 Cup coconut flakes
1/2 Cup mayonnaise
1/4 teaspoon curry powder (optional)
Salt and pepper to taste
1/8 cup heavy cream, whipped
6 croissants
Lettuce leaves
Tomato slices
Makes 6 sandwiches
Directions

In a large mixing bowl, stir together chicken, celery , grapes, pecans, and coconut.

In a separate bowl, combine mayonnaise, curry powder, salt, and
pepper. Fold into whipped cream.

Fold chicken mixture gently into whipped cream mixture. Cover and chill.

Slice open
croissants. Line openings with lettuce leaves and tomato slices. Fill with chicken mixture.
