Herbal Vinaigrette Sauce/Salad Dressing
2 cups plum tomatoes, peeled, seeded and diced
3 large shallots, minced
1 small clove garlic, minced
1 tablespoon minced fresh herbs, chopped
1/3 cup wine vinegar
3/4 cup extra-virgin olive oil
Juice of one large lemon
Salt and pepper
1. In a medium bowl, combine shallots, garlic, herbs and tomatoes.
2. Gently add in the remaining ingredients, taking care not to break the tomatoes.
3. Season well with salt, pepper and sugar.
Note: This can be used as a dressing for crispy greens and as a sauce for grilled or sautéed fish.
