Fluffy Cottage Cheese Blintzes
Ingredients
1 egg yolk
3 egg whites
1/4 cup flour
1/2 cup low-fat cottage cheese
1/3 cup skim milk
Makes 6 small blintzes
Directions

In a mixing bowl beat egg yolk until thick and lemon colored. Add cottage cheese; beat until almost smooth. Blend in skim milk and flour.

Beat egg whites until peaks fold over. Fold into batter . Let batter stand 5 minutes.

Pour 1/4 cup of batter onto a preheated griddle which has been brushed lightly with oil.
Bake until the top is bubbly and edges are baked. Turn and bake the other side.

Serve at once with mock sour cream or fruit.
