Cucumber Onion Salad
8-10 medium cucumbers, peeled and sliced
2 red onions, cut in thin rings and torn apart
1 cup Soy Yogurt
1/4 cup apple cider vinegar
1 tablespoon dried dill weed
1 teaspoon sea salt
In a large bowl, combine cucumber and onion.
In a small bowl, mix remaining ingredients. Pour over cucumber- onion mixture. Mix well. Refrigerate 2-3 hours.
