Cucumber-Yogurt Dip

Ingredients

1 medium cucumber, peeled, seeded and chopped (1 cup) 
1/2 cup plain low-fat yogurt
1 garlic clove, crushed 
2 tablespoons chopped fresh mint or dill 
Salt and pepper

Makes: 1-1/2 cups

Directions

Combine cucumber, yogurt, garlic, and mint and stir together. 

Season with salt and pepper. 

Cover and refrigerate until ready to serve.
