1 pound firm tofu, sliced and drained well between towels
1/2 cup celery, finely chopped
1/2 cup carrots, finely shredded (optional}
1 teaspoon onion powder or 1 tablespoon onion, very finely chopped
1 tablespoon plus 1 teaspoon Soy Mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons prepared yellow mustard
11/2 teaspoons dried parsley flakes
1/4 teaspoon dried dillweed
1/2 teaspoon turmeric
1/2 teaspoon sea salt
In a large bowl, place drained tofu and crumble
it with a fork. Stir in onion and celery.
In a small bowl, combine remaining ingredients and mix well. Chill several hours.
