Indian Curried Vegetable Yogurt Appetizer
This is a great dish that goes well with Indian unleavened bread (chapati) or sesame crackers or pita bread. Or you can eat it with toasted
Italian bread.
Yogurt is great for health. It contains "friendly" bacteria that strengthen the immune system and help ulcers heal more quickly. Yogurt also may help prevent recurrent yeast infections. It is also a rich source of calcium.
Ingredients
2 medium tomatoes, peeled, seeded, and chopped
1 cup peeled, seeded, and diced cucumbers
2 cups unflavored yogurt
2 tablespoons finely chopped fresh coriander or parsley
1 medium onion, finely chopped
1 medium garlic clove, crushed
9 tablespoons peanut oil
1 teaspoon curry powder or to taste
1 teaspoon chili powder or to taste
Salt and ground black pepper to taste
Serves 6
Directions

Heat the oil in a heavy skillet over moderate heat. Add the onion and garlic. Saute until soft but not browned.

Add the curry powder and chili powder and cook 1 minute, stirring constantly. Remove from the heat and cool.

Add the remaining ingredients and mix well. Taste and adjust the seasoning if necessary. Cover and chill before serving.
