Lemon Beet Rice

This rice preparation is extremely easy to make. It is also very healthy. It may be used as a main dish or as a side dish.


1. 1 cup uncooked rice
2. Fresh squeezed juice from 1 medium sized lemon
3. 1 cup cooked beet root, cut into small cubes
    1 yellow sweet bell pepper cut into small pieces
4. 1 cup onion cut into small pieces
    2 dessert spoons of fresh grated ginger
    1 dessert spoon crushed garlic

Cooking Instructions:

Cook the rice according to package instructions. When it is half cooked, add the lemon juice (item #2) to the rice and salt to taste. When the rice is cooked, set aside. Do not overcook.

Sauté the onion, ginger and garlic (item #4) in 2 dessert spoon butter. (You may replace the butter for olive oil if you prefer). When the onion starts to get transparent, add bell pepper and beet root pieces (item #3) and cook for another minute or till the contents are dry. Add this to the rice and mix well. You may decorate the rice with a sprig of parsley and cilantro prior to serving if you wish. Serve hot with a side dish or alone.
