Mediterranean Rice Salad
This salad goes well with fish or chicken. If you are using this as a complete meal salad, add tuna or cold diced chicken to the rice mixture.
1-1/2 cups cold cooked rice
Yield: 4 servings
Combine rice with Italian dressing, parsley, salt, and pepper in a small bowl. Toss to coat thoroughly.
Add green pepper and olives and mix gently.
Garnish with sun-dried tomatoes. Serve on a bed of shredded lettuce.
