Mediterranean Rice Salad This salad goes well with fish or chicken. If you are using this as a complete meal salad, add tuna or cold diced chicken to the rice mixture. Ingredients
1-1/2 cups cold cooked rice Yield: 4 servings Directions Combine rice with Italian dressing, parsley, salt, and pepper in a small bowl. Toss to coat thoroughly.
