3/4 pound halibut or salmon filets (1-inch thick)
1 cup Mustard-Dill Sauce
4 medium size thin-skinned boiling potatoes, cut in 1/4-inch slices (about 3 cups)
2 medium carrots, cut into 1/4-inch rounds (about 1 cup)
2 medium zucchini, cut into 1/4-inch rounds (about 2 cups)
3 tablespoons lemon juice
1-inch strip lemon peel
2 slices onion
4 sprigs parsley
1 bay leaf
3 cups water

Yield: 4 Servings

Directions

  1. Steam potatoes and carrots for 15 minutes.

  2. Add zucchini and steam for additional 10 minutes or until desired texture is reached.

  3. Bring water, lemon juice, lemon peel, onion, parsley, and bay leaf to a boil in a shallow pan or skillet. Simmer for 5-10 minutes.
