Southern Grilled Potato Skins

Ingredients

6 large potatoes, scrubbed

Seasonings
3 tbsp (45 ml) sunflower oil 
1 tsp (5 ml) garlic salt 
1 tsp (5 ml) chilli powder 
1 tsp. (5 ml) mixed (apple pie) spice 
1 tsp (5 ml) ground cumin 
Freshly ground black pepper

Directions

1. Prick the potatoes allover with a fork. Bake in a preheated oven at 350F (180C) for about 1 hour or until soft. If you prefer you can bake the potatoes in the microwave for about 4 minutes per potato (or according to the manufacturer's directions).

2. Cut the potatoes in half and scoop out most of the potato, leaving a 'wall' about 1/4 inch (5 mm) thick. Cut each half into three wedges.

3. Brush allover with oil. Mix the seasonings together then sprinkle evenly over the potato skins.

4. Place on a sheet of foil. Barbecue for about 10 minutes, turning occasionally, until crisp and golden.

Serve hot.
