Spanish Grape Soup
Ingredients
1 lb. (450 gms) grapes
1 lb. (450 gms) ground almonds
3 cloves garlic
2 oz. (55 gms) dark brown breadcrumbs
1 tblsp. vinegar
1 cup olive oil
1 pint water
salt
fresh black pepper
Directions
1. Mix together the almonds, breadcrumbs, garlic and salt and pepper. Pound them well. (Mince the garlic and mash all together with a fork.)
2. Gradually add the oil, then the vinegar and then the water, mixing well.
3. Add the skinned and seeded grapes. Chill well before serving.
Serve with buttered crackers.
