Spinach with Garlic and Olive Oil
A very easy, quick and nutritious recipe.
1 clove garlic, minced
1 pound spinach, washed and trimmed. Cut the spinach leaves in half if they are more than 5 inches wide
Olive oil spray
In a large skillet, cook the garlic with a few teaspoons of
water over medium-low heat, about 2 minutes. Be careful not to scorch the garlic.
Spray the garlic lightly with oil and swirl in the pan for 30 seconds.
Add the spinach to the skillet. Spray lightly with oil again, and swirl to coat the spinach with garlic and oil.
Reduce the heat to low, cover, and cook for about 1 minute. (Just until the spinach wilts.)
Sprinkle with salt to taste (optional). Serve hot.
