Turkish Chilled Tomato Soup
Ingredients
3/4 cups unflavored yogurt
Finely chopped chives or scallion tops
2-1/4 cups tomato juice
3/4 tablespoons olive oil
1/8 cup freshly squeezed and strained lemon juice (or to taste)
3/4 teaspoons curry powder or to taste
Pinch crushed dried thyme
Salt to taste
Serves 3
Directions

Spoon the yogurt into a mixing bowl. Beat until
smooth.

Add the olive oil, lemon juice, curry powder, and thyme and mix well.

Gradually stir in the tomato juice until thoroughly blended.

Season with the salt.
Adjust seasonings, if necessary. Cover and chill.

Serve sprinkled with the chives or scallion tops.
