Turmeric Chicken from India
1 frying chicken ( 3 pounds) , cut into serving pieces
1 cup uncooked rice
l/2 cup chopped onion, cooked in butter until wilted
2 cups boiling Chicken Stock
1 tablespoon lemon juice
1 tablespoon ground turmeric, or more to taste
1/2 teaspoon black pepper
1 bay leaf
Salt to taste
4 to 6 servings
Preheat the oven to 325 degrees F (160 deg C).
Combine all the ingredients in a two quart casserole. Cover and bake for about
75 minutes, until the rice and chicken are tender.
