Whole Wheat Soy Waffles
Ingredients
1 cup whole wheat flour
1/4 cup soy flour
2 teaspoons baking powder
2 eggs, separated
11/2 cups skim milk
3 tablespoons oil
2 tablespoons honey
Makes about 10 waffles
Directions

Preheat waffle iron.

Stir together the two kinds of flour and baking powder.

Beat egg yolks until they are light yellow; add milk, oil and honey. Blend well and stir into the dry ingredients.

Beat egg whites until stiff, and fold into batter.

Pour batter onto the hot waffle iron.
Approx. Cal/serving: 130
Variation
With Nuts: Fold 1/2 Cup of chopped nuts into the beaten egg whites before adding them to the batter.
Approx. Cal/serving: 170
