Greek Chicken Salad
2 cups cooked chicken, cut in large chunks
3 hard-boiled eggs, sliced (Substitute whites only from 6
hard boiled eggs if you are watching cholesterol)
1/2 cup chopped olives
1/2 cup chopped celery
1. In large bowl, place chicken, eggs, olives and celery.
2. Add Dressing and stir gently to mix well. Serve on lettuce
Makes 4 servings.
1/2 cup plain yogurt
2 tablespoons mayonnaise
1 small lemon
salt to taste
Mix together the yogurt, mayonnaise, juice from the lemon, mustard, dill, garlic, pepper and salt. Mix well. Refrigerate the unused portion.
