Greek Village Salad
This is the perfect side dish for any barbecue. It is also very simple to make.
1/4 small white cabbage, shredded
1/2 small iceberg lettuce, shredded
3 tomatoes, cut into wedges
2 in (5 cm) piece of cucumber, diced.
1 small onion, sliced and separated into rings
3/4 cup (approximately 3 oz or 75 g) Feta cheese, roughly crumbled
6 black olives
1 tsp (5 ml) dried oregano
Red wine vinegar
Freshly ground black pepper
1. Mix the cabbage and lettuce. Spread it on a large platter. Scatter the tomatoes, cucumber, onion, cheese and olives over. Sprinkle with oregano.
2 Just before serving, sprinkle a little olive oil and vinegar on the salad. Now sprinkle salt and a good grinding of black pepper.
Makes 6 Servings
