Turkey Salad Vinaigrette
A great recipe to use left over turkey
from Thanksgiving, Christmas, etc.
1 pound Fully-Cooked Turkey Breast, cut into 1/4-inch cubes
1 jalapeno pepper, seeded and minced
4 red leaf lettuce leaves
1/4 cup minced red onion
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
2 tablespoons white wine vinegar
1 tablespoon olive oil
2 teaspoons lime juice
1/2 teaspoon salt
Bagel chips (optional)
Whisk together vinegar, oil, lime juice, salt, ginger and black
pepper in a medium bowl. Stir in turkey, onion and
jalapeno pepper. Cover. refrigerate several hours before serving.
Line each salad plate with lettuce; top with turkey mixture.
Serve with bagel chips, if desired.
