West African Ginger Beer
Ginger beer is a favorite drink in West Africa and the Caribbean.
2 quarts water
Combine 2 cups of the water with the ginger in a saucepan. Simmer over medium heat for 20 minutes. Stir in the lemon juice and honey. Let it cool completely.
Strain the ginger mixture into a large pitcher. Add the remaining 1.5 quarts water. Add the ice cubes, and let stand until well chilled. Serve. (You can add a teaspoon of run per glass if you prefer to the drink before serving.)
Yield: 2.5 quarts (10 servings)
