3 to 4 carrots, diagonally sliced
2 zucchini, diagonally sliced
3 tablespoons orange juice
1 tablespoon vegetable oil
Salt and pepper
Heat oil in a medium skillet or wok over medium heat. Add
carrots. Stir-fry 3 minutes.
Add zucchini and orange juice. Stir-fry 4 minutes or until vegetables are crisp-tender.
Season with salt and pepper to taste.
