33. Is it better to eat fresh herbs or dried herbs?

Eating freshly picked herbs will ensure that you receive all of the active ingredients contained in the herb. However, to get the same amount of active ingredients from a fresh herb as from its dried, encapsulated alternative requires that you eat a huge amount of the fresh herb-often up to four pounds. So dried, preferably lyophilized herb capsules are your best bet. The fresh herb does contribute one thing that the dry herb does not: water. The water contained within the fresh herb is a natural vehicle that magnifies the action of the dispersed active principles. If you eat fresh herbs regularly, not as condiments but as main food sources, there is no need to take herb capsules.
