Broccoli Cheese Soup
10 oz. broccoli, chopped
1 small onion, chopped
1 1/2 cups half-and-half or light cream
1 cup water
1 cup chicken broth (or vegetable)
2 1/2 cups shredded cheddar cheese
4 tbsp. butter
5 tbsp. flour
1/2 tsp. garlic powder
Melt the butter in a large sauce pan, over low heat. Add the
flour. Mix well and then add the liquids. Increase the heat
to medium. Allow to cook for a few minutes, stirring often
to prevent sticking, until it begins to thicken.
Add the broccoli, onion and garlic powder. Allow to cook for
an additional 15 minutes. Add the cheese and cook for another
