Fiery Hot Chicken Strips
Ingredients
4 41/2-ounce skinless, boneless chicken breast halves
2 to 3 tablespoons hot pepper sauce
2 tablespoons butter or margarine
Yield: 4 servings
Directions

Cut chicken into finger-size strips.

In a large skillet, melt butter with 1 tablespoon hot sauce over medium heat.

Add chicken and toss to coat. Cook, tossing occasionally, until chicken is golden outside and white throughout but still moist, 8 to 10 minutes.

Sprinkle remaining 1 to 2 tablespoons hot sauce over chicken. Toss the chicken well, and increase heat to medium-high. Cook, tossing, for 2 minutes, or until chicken is glazed.
Serve immediately with a tossed salad for supper. Or serve as an appetizer with Light Blue Cheese Dressing for dipping.
