Hot, Fiery Meatballs Warning! This is spicy hot!! It is called a great ball of fire in Texas. Ingredients
2 pounds lean ground beef (round or chuck) Makes 6 to 8 servings. Directions Cut jalapeno peppers into 1-inch thick pieces. Remove seeds, if desired. Form a 1-1/2-inch ball of ground beef around each jalapeno chunk. Using metal skewers, skewer the meatballs so the skewer pierces the pepper and holds the meat in place. Grill 18 to 20 minutes or until well done, turning skewers every 5 minutes. (If you use a gas grill, use high heat. On a charcoal grill, place the meat 4 to 6 inches from hot coals.)
