Scrambled Tofu with Garlic and Red Peppers
Ingredients
6 ounces soft tofu
2 fresh mushrooms, chopped
1/4 small onion, minced
1/4 red bell pepper, seeded and chopped
1/2 clove garlic, pressed
1/2 teaspoon each ground turmeric and dried thyme
Olive oil cooking spray
Dash of black pepper
Serves 4
Directions

Spray a medium-size skillet with olive oil and place over low heat. Add the vegetables.

Cover, and allow to "poach" for 2 to 3 minutes.

Add the tofu, herbs and spices. Fry, stirring a few times, until the vegetables are soft.
Break the wedge of tofu up into chunky pieces while scrambling with a wooden or plastic spoon. Scramble light to firm, depending on your preference.
Tabasco sauce goes well with tofu.
